Chicken & Dumplings
1 whole chicken 1 smoked turkey leg 2 cubes chicken bullion 4 stalks celery 5 carrots 1 sweet onion
4 cloves garlic 2 parsnips 1 bay leaf 1 tbsp dried parsley or 7 sprigs fresh parsley
in fry pan saute onion and garlic in 1 tsp olive oil. Add celery and carrots. Cook for about 5 min. Add these to the stock pot with the chicken and turkey leg. Add rest of the ingredients. Add enough water to cover chicken 3/4 way. Cover and simmer on med-low for about 4-6 hours or until chicken is starting to fall off bone. Pull chicken and turkey out of stew and pick out bones and skin. Add chicken back to pot bring to low boil and follow instructions for dumplings on Bisquick box. I also add a small amount of chicken bullion and parsley flakes to mixture for some flavor. When dumplings are done pull out and thicken chicken stew to liking.
